Sep. 22nd, 2007 05:58 pmSince I know some of my flisters enjoy reading about good food, submitted for your approval is this week's veggie curry.
Steam one delicata squash and scrape the cooked innards from the skin. Blend with stick blender.
A quarter of an onion, chopped fine and sauteed in olive oil and ghee.
Leftover homemade curry powder, garam masala, and cumin.
Chopped sweet potato and cauliflower.
A bit of chicken broth. (It could have been veggie broth, but I used what was already open.)
Cook until fabulous.
Stir in some homemade mango chutney (or the store-bought kind if that's all you have).
Squeeze on some fresh lime juice and serve over brown rice.
Soooooooooo yummy!
